Beaufort cheese flour butter 1 half litre milk 4 eggs Nutmeg, salt and pepper |
Preparation | |

1 | Melt the butter in a pan and stir in the flour. Add the milk, salt and pepper, and season with a little freshly ground nutmeg. |
2 | Cook while stirring until the mixture starts to thicken, then remove from the heat and add the egg yolks, grated Beaufort cheese and stiffly beaten egg whites. |
3 | Pour into a buttered soufflé dish until ¾ full. Sprinkle Beaufort cheese on top and bake, first at very high heat and then low heat. Serve immediately. |
