Baked eggs on sardines

  • 1 tin of sardines (ca. 125 g tin)
  • 4 eggs
  • Handful of finely chopped parsley
  • 1 small shallot (diced finely)
  • 2 cloves of garlic, finely chopped
  • Pepper and salt to taste
  1. Heat the oven to 250°c and preheat an ovenproof casserole dish for a few minutes.
  2. Place sardines in the warm casserole dish and break them apart slightly with a fork. Add diced shallot, chopped parsley, and finely chopped garlic-
  3. Add some ground black pepper and return the dish to the oven, allowing to bake for 5-6 minutes.
  4. Remove the dish from the oven.
  5. Break four eggs gently on top of the sardine mixture (spaced as evenly as possible). Season with salt and pepper.
  6. Place the dish back into the oven for seven minutes, until the egg whites are cooked but the eggs still wobbly.
  7. Remove from the oven and let sit for five minutes (the eggs will continue to cook a bit in the hot dish).
  8. Serve with toast. Great served with a salad as a side dish, or just enjoy as a breakfast food!
