Blue- and Black-berry Panna Cotta

Panna cotta:

  • 5 dl cream (liquid)
  • 3 tbsp sugar
  • 1 vanilla bean (seeds scraped from bean)
  • 1 tbsp berry liqueur (such as kirsch or crème de cassis), or to taste
  • 2 sheets of gelatine, softened in cold water for 5-10 minutes


  • 1 dl water
  • 1 lime, grated zest and juice
  • 4 tbsp sugar
  • 175 g fresh blueberries
  • 175 g fresh blackberries

Prepare and serve in 6 glasses or glass dessert bowls

  1. In a pan, cook the liquid cream, sugar and vanilla seeds for 10-12 minutes.
  2. Pour the mixture through a sieve, add liqueur. Stir in the softened gelatine until it dissolves smoothly.
  3. Pour into 6 serving glasses. Allow to set in the refrigerator for 3-4 hours.
  4. Boil water, lime juice, lime zest and sugar. Remove from stove, add the berries. Allow to cool.
  5. Shortly before serving, spoon equal amounts of the berry mixture into each panna cotta glass.
