  • 1 tsp olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 potato, peeled, diced
  • 1 head of cauliflower, chopped
  • 450 g chicken stock
  • 80 g blue cheese, crumbled
  • Ground black pepper, to taste
  1. Heat oil in a large pan over medium heat. Add onion and garlic and cook until softened. Add potato and cook for 3-4 minutes. Add cauliflower and chicken stock. Bring to the boil. Reduce heat and simmer until vegetables are tender.
  2. Purée soup until thick and creamny.
  3. Reheat, add cheese and stir through until melted.
  4. Season with pepper and serve.
