Cheese gnocchi with chives

Gnocchi:

  • 3.5 dl milk
  • Salt, nutmeg to taste
  • 80 g. butter
  • 200 g flour
  • 5-6 eggs, depending on size

 

Sauce:

  • 2 Tbsp butter
  • 1 Tbsp flour
  • 3.5 dl milk
  • Nutmeg
  • 50 g. freshly grated cheese (e.g. Gruyere, Sbrinz –or other hard cheese)
  • 3 Tbsp finely chopped chives
  1. In a saucepan, bring  milk to a light boil, adding a little salt and freshly grated nutmeg.  Sift flour, then empty all the flour in one go into the milk. Keep cooking an stirring until the mixture no longer sticks to the bottom of the saucepan. Remove the pan from stove and add eggs one after the other while stirring. Allow ‘dough’ to cool.
  2. In another pot, bring salted water to a light simmer. Use two tablespoons to form gnocchi from the dough and place gently into simmering water – allow to poach for  ca. 4 minutes
  3. Butter a gratin dish – place the poached gnocchi gently into the gratin dish one by one.
  4. Sauce: Melt butter, stir in flour, and then add milk bit by bit while stirring. Allow to cook gently for 10 minutes while continually stirring. Add the freshly grated cheese into the sauch while stirring.
  5. Pour the sauce evenly over the gnocchi in the gratin dish.
  6. Bake for ca. 30 minutes in oven preheated to 200°C
  7. Serve while hot – great with a salad
