Figs in Zabaione

Ingredients
2 tbsp
  50 g

6 tbsp

2-3 tbsp
almond slivers
4 large, or 8 small, fresh figs
2 large egg yolks
dry white wine
lemon juice
brown sugar or vanilla sugar
   

 

Preparation
1 Roast almond slivers in frying pan until slightly browned, set aside.
2 Wash figs carefully and dry, slice in quarters or smaller, place equal portions into 4 serving bowls or dessert glasses.
Zabaione
3 bring water to boil in a pan. In another smaller pan or heat proof bowl, place egg yolks, wine, lemon juice and sugar.
4 Place over pan with boiling water and beat ingredients with handmixer at high speed for ca 5 minutes. The mixture should be foamy and light (not too hot).
5 Spoon the Zabaione mixture over the fig slices and sprinkle almond slivers on top and serve.
