  • 200 g calcium-set tofu, with herbs if available
  • 3 scallions
  • 1 garlic clove
  • 100 g red lentils
  • 250 ml unsweetened coconut milk
  • 2 tbsp oil
  • 1 pinch cardamom
  • 1 pinch cumin
  • 2 tsp spicy curry powder
  • Salt
  • Pepper
  1. Cut tofu into cubes. Clean scallions and cut into halves. Cut the white and light green parts into 3 cm sized pieces. Mince garlic.
  2. Heat oil in a pan. Stew scallions and garlic for 1 minute. Add lentils, cardamom, cumin, curry, salt and pepper.
  3. Add coconut milk and stew covered for 5 minutes.
  4. Add tofu and stew 3-4 minues more.
  5. Serve with rice.
