Salmon and Cheese Fettucini

  • 400 g dried fettuccine
  • 300 g green beans, trimmed, finely shredded lengthways
  • 160 g low -fat cream cheese
  • 95 g can salmon (in water)
  • 6 tsp baby capers, drained
  • 3 Tbsp lemon juice
  • Ground black pepper, to taste
  • 2 lemons, cut in wedges
  1. Cook pasta following instructions on package. Add beans during the last minutes of cooking. Drain and return to saucepan.
  2. Add cream cheese to saucepan and toss with pasta until melted. Add salmon, capers and lemon juice. Combine well and then serve sprinkled with pepper and lemon wedges on the side.
