  • 1 can (420 g) red or pink salmon
  • 75 g chopped red pepper
  • 2 green onions, chopped
  • 8 crackers, unsalted, crushed
  • 2 tsp lemon juice
  • 2 egg whites, whisked
  • 2 Tbsp plain low-fat yogurt
  • 1/4 tsp ground black pepper
  • 4 hamburger buns or soft wholegrain buns
  • 2 tomatoes (sliced
  • 8 iceberg lettuce leaves
  1. Heat oven to 220 °C.
  2. Drain salmon; place in a medium mixing bowl and flake.
  3. Add red peppers and green onions, crackers, lemon juice, yoghurt and egg whites. Shape into 4 patties.
  4. Coat large nonstick frying pan lightly with cooking spray; heat.
  5. Cook salmon burgers until golden brown, turn, and continue cooking until other side is golden brown.
  6. Place salmon burgers in warmed buns, with sliced tomatoes and lettuce.
