Traditionally a special spetzli sieve is used to make spetzli noodles. They may also be prepared by letting the batter drip in thin strips from a board into boiling salted water.

Note: Spelt is a nutritious and flavorful relative of common wheat. It has a delicious, light and nutty flavor. If not available substitute with normal wheat flour.

SPECIAL TIP: heat the spetzli at high temperature in the oven for a few minutes to enjoy a delicious crispy crust!

grated emmental cheese

cress

corn oil

Vinegar, salt, lemon juice

 

Preparation
1 Prepare the batter by mixing flour, salt, nutmeg, milk, oil and eggs.
Let it sit for ten minutes.
2 Preferably a special spetzli sieve is used to make the spetzli noodles. If not available let the batter drip in thin strips from a board into boiling salted water.
3 As soon as they swim on the surface strain them in a sieve. Set them aside.
In the meantime heat oil and fry the diced onions in a deep pan until they are light brown.
Add the spetzli, sprinkle them with grated cheese and season with salt and freshly ground pepper.
Cover them until the cheese is melted.
3 Wash and prepare the lettuce with the other salad ingredients.
Then mix the spetzli up one more time, sprinkle them with chopped cress and immediately serve them accompanied with the salad.
