Tuna and Broccoli Pasta Casserole

  • 200 g Penne (or similar pasta)
  • 500 g broccoli florets
  • 30 g Oil spray
  • 2 Tbsp butter
  • 30 g flour
  • 1 clove garlic, crushed
  • 1 pinch dried red chili flakes
  • 500 mL milk
  • 185 g canned tuna in water, drained, flaked
  • 2 tbsp oil-free sun-dried tomatoes, sliced
  • 50 g grated mozzarella cheese
  • Fresh basil
  1. Cook pasta in a medium-sized pan following directions on the package. Add broccoli to pan in the last 3-4 minutes of cooking. Drain. Preheat grill to high. Spray an ovenproof baking dish with oil.
  2. Melt butter in a large saucepan over a medium heat. Add flour, garlic and chili flakes. Stir until mixture thickens and bubbles.
  3. Remove from heat and gradually whisk in milk. Return to heat and cook, stirring, for 5 minutes or until thickened. Remove from heat.
  4. Add tuna and tomatoes to pan then stir in pasta and broccoli. Spoon mixture into prepared baking dish and sprinkle with mozzarella. Grill for 4-5 minutes or until cheese has browned and melted. Top with basil
