Doogh is a beverage popular in Iran and some other Middle East countries. Doogh could be served as a healthy beverage with meals and it will especially be served with kebab.

Traditionally, doogh is left out of fridge for 2-3 days in order to allow the yogurt cultures to ripen and carbonate the beverage. Carbonated doogh is a popular soft-drink in Iran. The carbonation in commercially-produced doogh however, comes from carbonated water being used in the dilution of the yogurt. Because of this, commercially-produced doogh generally has harsher carbonation and coarser bubbles. Doogh is generally served chilled, or over ice.

Note: Pennyroyal is a type of mint

1 tsp
1 glass of yoghourt
2.5 glasses of water or carbonated (fizzy) mineral water
dried mint
pennyroyal (optional)
Salt (trace)
Black pepper (optional)


1 Beat yoghourt until it flows smoothly.
2 Add mint, pennyroyal, salt, and black pepper, and mix well.
3 Add water to yogurt gradually and mix as you add. The quantity of water can be adjusted to obtain the desired density.

Place in fridge for a few hours. Mix again before drinking.
